To make the perfect pizza in the most ordinary oven, it is important to remember the following: The dough recipe, sauce recipe, and toppings are not as important as the baking temperature. Italian pizza is originally cooked in a wood-fired oven at a temperature of 450-550 C for not more than 1 minute so that it has a crispy outside and a thin elastic crust. It is not easy to imitate a wood-fired oven with such high baking temperature at home; that’s why the following methods are used: heating up the oven to the maximum (250-300 C); using a special stone plate instead of a tray and heating it along with the oven. Bake pizzas on a stone for no longer than 10-15 minutes. Since I don’t have a stone, I bake on a metal tray, but at the highest temperature (250-300 C) in a very well heated oven to that temperature. It takes 10-15 minutes to bake, depending on the size of the patty. As soon as the sides of the dough are browned and the cheese is melted and bubbling, the pizza is ready. Remove it right away! It is important not to dry out the pizza, this often happens if you bake it at medium temperature (about 180 C) for a long time (20-30 minutes). The pizza dough is made according to the easiest recipe of the lean yeast dough with olive oil; the risen dough is not kneaded a second time, but is immediately stretched with the palms of your hands to the desired size. The rolling pin is thought to destroy the air bubbles in the dough, so it is not used. I do roll out the dough with a rolling pin, but I let the base air out for about 20 minutes so that the air bubbles can form inside again. To prevent the base of the pizza from becoming dry and greasy when baked, roll out the flatbread and place it on a lightly floured baking sheet (do not grease it, only flour). To ensure that the base does not become soggy from the excess moisture of the filling and sauce, laying dough in a baking pan, first of all side on which you will lay the stuffing, lubricate with olive oil, only after that distribute the sauce and stuffing. To make the pizza tasty and well-done in a short time do not overload it with ingredients, spread the cheese in small spacing.
Advice for cooking in modern ovens: When baking pizza in new modern ovens, use the oven manufacturer’s recommendations. See manual. Why it’s so important? Old domestic ovens are almost always a little leaky, and natural ventilation (convection) is provided during baking. In the old oven, simply set the maximum temperature of heating, warm up the oven itself well and the pizza will be perfect with dry, crispy crusts and juicy cheesy middles. Oven effect. Modern ovens are sealed so that when heated in a standard oven (classic top heating) the moisture does not evaporate and the pizza gets moist. The result is very different. Therefore, I recommend using the mode for baking pizzas, which is suggested in the instructions of your oven, it usually includes a powerful fan mode heating. I have a mode called Heating from below ventilation heating and the tray should not be placed in the middle, but closer to the bottom of the oven. Set the temperature to 220°C. The pizza is perfect, not soggy, very tasty!
- 300g (2 full cups) flour

- 2 tbsp.л. extra virgin olive oil (to grease the dough)

Grease your hands with any oil and knead the dough for about 10 minutes. The dough should be elastic, soft, moist and not dry. If the dough is a little too hard, mix in a couple more spoonfuls of water and a spoonful of oil.
We cover the smooth kneaded dough with a towel and leave it in a warm place without drafts for 1.5 hours (or until it doubles in size). The dough, for example, can be placed in a large saucepan with a lid, and the pan in a tub filled with warm water). Do not knead the dough after springing.
Make sauce. Put tomato paste (1 Tbsp.Dilute with water (4 tbsp.л.) until the consistency of thick tomato juice. Salt (0.3 tsp.л. Taste and season with salt and sugar (0,5 tbsp).л. of sugar), pour in dried oregano herb (oregano) 1 tsp.л. on top. Stir.
Pour the dough out of the bowl on a surface sprinkled with flour. There is no need to knead the dough additionally, roll out the risen dough directly with a rolling pin to a thickness of 0.5 cm. I make a rectangle for a whole tray, but you can divide the dough into 2 pieces and roll out 2 circles one after another.
Turn on the oven to maximum temperature (250-300 C). Bake pizzas in well-heated ovens at the highest temperatures. Prepare a baking tray: cover with foil and dust with flour. I do not recommend applying butter.к. Thin dough will be saturated with oil and will not bake, but will fry like a pie in a pan.
Place the pizza base on the baking tray. Brush it with olive oil (2 tbsp.л). This point is very important, oil the crust is necessary, otherwise it can get soggy from the sauce. If you do not have extra virgin olive oil, use scented vegetable oil. Let the dough rest for about 20 minutes, during this time the bubbles squeezed out by the rolling pin will regain their shape. Then go to the next step.
Grate the Parmesan on a fine grater directly onto the pizza. You should not overload the base with stuffing; it may not bake well and lose a lot of flavor. As the Italians say, for a good pizza it is enough to grease the base with fragrant olive oil and sprinkle oregano. It is not for nothing that one of the most minimalist pizzas in terms of toppings is the popular Margarita.
Bake the pizzas in a well-heated oven on a medium shelf at the maximum temperature (about 250-300 degrees) for 7-15 minutes, depending on the capacity of the oven. In my old oven, I bake for 12 minutes at maximum power. Once the sides of the dough are browned and the cheese is melted and bubbling, the pizza is ready. Take it out right away! It’s important not to make the pizza too dry, which can happen if you bake it at medium temperature (about 180 C) for a long time (about 20-30 minutes). Do not bake the pizza that long. In the original oven it bakes at 450-550 degrees in wood burning ovens no longer than 1 minute. IMPORTANT: For modern ovens (not old domestic ones): I recommend using the mode that is suggested in the manual for pizza baking, usually it includes a powerful fan mode. In my new oven this mode is called bottom ventilation heating and the tray should not be placed in the middle, but closer to the bottom. The temperature I set is 220C. Read the tip at the beginning of this post, in the introduction.
The pizza dough can be made with either fresh or dry yeast. Dry yeast is more convenient. You will need:
- Flour (two cups);
- Dry yeast. one bag;

Sometimes you need to add a little flour if the dough is a little runny. Let the dough rise. Put the bowl in a warm place (you can put it on a pan of hot water) and cover it with a towel. It will begin to rise. Knead it twice. Dough generally rises in half an hour to an hour.

Try to exclude optional conditions at first. For example, the first pizza doesn’t have to be round. Don’t start with complex, multi-component toppings. Do not bake several pizzas on different tiers at the same time, especially if the oven is not equipped with a convection oven.
Maintain a reasonable balance between the thickness of the base and the amount (layer) of toppings.
To ensure that the dough bakes well and does not spoil from the juice or sauce, send the prepared pizza to the preheated oven immediately, do not keep it assembled on the kitchen table.
If you fear that the filling will burn or dry out, and the dough will remain raw in the meantime, divide the process into two parts: first, bake the base until semi-baked and only then garnish with sauce and the rest of the products and bring to perfection. You are much more likely to get a good result. This tip is also good if the pizza is cooked on a frozen base.
The toppings traditionally use foods that can be eaten without additional heat treatment. Most often cheese, sausage, ham, canned or fresh vegetables, herbs, tuna, anchovies. If you cook pizza with chicken or mushrooms, you must first boil the breast or stew the mushrooms. To heat, melt, and baste already cooked foods, 3 to 5 minutes in a well heated 200-220 oven is sufficientºС.
